Singapore apricot season is here. The fruit is tart — the good kind of tart — cooked down with whole vanilla beans into a molten jam that softens just enough without losing its edge. Folded into cream, it becomes something brighter: a little sharp, a little sweet, a little floral.

The centre is vanilla rice pudding. Creamy, gentle, and satisfying in a way that stays with you. You'll see the vanilla seeds. The apricot doesn't drown them out. A cooling cake for a Singapore summer.
